摘要
猪肉的变质程度与颜色的变化呈现密切的关系。由于计算机视觉不受人的生理和心理因素影响,评价标准客观和稳定,为此,建立了用于颜色量化的计算机视觉系统,对猪肉的颜色和色差进行采集、处理、显示和评价。由于CIELab色差公式存在不足之处,而CIEDE2000色差公式在理论上是目前和人的视觉最能够相匹配的公式,因此应用CIEDE2000色差公式对肉样进行分级。
The degree of bad meat and the color change have a close relation. Computer vision doesn't get the physiological and psychological factor influence of person; Appraisement standard is objective and steady. Therefore, computer vision system using color quantification has been established, which can do collection, management, display, and appraisement of porky color. Because of the limitation of CIEL*a*b* color difference formula, CIEDE2000 is the color difference formula which can match with person vision theoretically at present, therefore a new color difference formula was introduced into the classification of pork.
