摘要
采用直流芒刺高压静电场对食品中主要致病菌大肠杆菌的菌液进行处理,测定了电导率、pH、温度变化,以及大肠杆菌细胞的蛋白质泄露和核酸溢出的情况,并根据大肠杆菌生活微环境的变化对致死机理做了初步探讨。
Samples of E.coli were treated by needle high voltage electrostatic field. Conductivity, pH, variety of temperature and outflowing of cellular protein and nucleic acid were detected. On the base of change of surroundings of E.coli, sterilizing mechanism of needle high voltage electrostatic field on E.coli was discussed.
