摘要
近些年,我国番茄加工产业有了迅猛的发展,其中尤以新疆番茄加工产业(番茄酱)的生产最为突出,这其中也存在一些深层次的问题,如番茄酱生产中的“过度加热”等,都有待食品方面的专业人士加以研究、探讨和解决。
In recent years, Chinese processing tomato industry had developed expeditiously, especially Xinjiang tomato paste processing is outstanding, but there are a lot of profound problems in these, such as the over-heating of tomato paste processing. The experts of food processing should research, discuss and resolve these problems.
