摘要 以废蚕茧为原料,采用As1398蛋白酶水解工艺,得到丝素肽的低分子量降解物,经过对降解物进行脱色处理,用超滤膜分离出分子量10000Da以内的丝素肽,制成含丝素肽3%、含糖量12%、pH5.5的丝素肽饮料,20℃贮藏达10个月以上无沉淀产生,解决了丝素蛋白的酶解率低、生物效价低等问题,为蚕茧蛋白食品的开发提供一条有效途径。 Waste cocoon was hydrolyzed with As1398 enzyme to obtain fibroin peptides of lower molecular weight which was decolourized and then filtered by the uhra-filter(UF) technology to give peptides of molecular weight less than 10 000 Da. Health beverage containing 3% peptides and 12% sugar were prepared and stored at 20℃ for over 10 months without precipitation. The problems of low enzymolysis efficiency and low biovalue of silk proteins of large molecules were solved and an efficient way was found for the development of products containing fibroin.
