摘要
大豆β-伴大豆球蛋白约占大豆籽粒总蛋白含量的25%,是7S球蛋白的组分之一,是影响大豆籽粒蛋白营养品质及加工品质的重要组分。本文对大豆7S球蛋白β-伴大豆球蛋白的基本属性,亚基积累规律,遗传变异体的种类及其分子遗传学水平的研究现状等进行了综述。
β-conglycinin is major composition of 7S globulin. It represents approximately 25%of the protein in a soybean seed,and affects the nutritional quality and functional properties of soybean protein in soy protein foods. In this review, the general features of soybean β-conglycinin were reviewed;the accumulation regular of soybean β-conglycinin subunits were described; the genetic variants of soybean β-conglycinin and foundation information of genes encoding soybean β-conglycinin are summarized.
