摘要
随着工业技术的发展,生物表面活性剂的应用越来越广泛。本文首先对其定义、种类、性质和优点进行了概述,进而介绍了生物表面活性的制备、提取及其在食品工业中的应用,最后对其发展前景进行了展望。
With the development of industry technology, the application of biosurfactant is more and more widespread. Firstly, thedefinition, category, and the advantagesof biosurfactants were summarized, then theirpr eparation, isolation and the applications in food industry were introduced. Finally several suggests of their development prospect were introduced.
