摘要 红薯又称白薯、蕃薯、地瓜、山芋、红苕等,在植物学上的正式名字叫甘薯,属旋花科,一年或多年生草本植物。红薯在世界几种主要粮食作物产量中排名第七位,在我国仅次于水稻、小麦和玉米,居第四位。我国是世界上红薯最大的生产国,近几年红薯产量每年都超过1亿吨,占世界总产量的80%以上。虽然我国红薯的种植面积和产量均居世界首位,但红薯加工业发展却很缓慢。 Sweet potato is a kind of agricultural product widely planted in China.In recent years.China produces over a hundred million tons, which accounts for 80% of the world total yield. Sweet potato is rich in nutrients including vitaminB1, vitaminB2,carotene and vitamin C which are hardly contained in other foodstuff crops.In addition,sweet potato is a kind of physi- ological alkalinity food that can adjust acid-base equilibrium. Sweet potato is called'Longevity food'in Japan and America. Sweet potato is not only rich in nutrients but also having health functions which can defend cancer,constipation,hypertension and cardiovascular disease etc. Because of rich nutrition and functional ingredients,sweet potato can be used to develop new type health foods,which are increasingly popular.At the beginning of the development of sweet potato health foods,most of the products are made in the forms as capsules,tablets and oral solution,which can not be easily accepted by many consumers, especially children.But the sweet potato drinks could attract people with the favoring color,scent and smell. However,there are some problems in the production of sweet potato drinks:easy to brown,easy to be smelly after cooked,easy to produce sediment and so on.We can solve the problems through optimizing color protection,enzymolysis technics and variety improvement. In addition,supernatant solution produced in sweet potato starch production is usually dumped that causes pollution.But actually,it can be used to produce sweet potato beverage and thus it Could benefit environment.In short,as a kind of nutritional and natural beverage,sweet potato drink will become a new highlight in future market.
