摘要
酸性条件下,强化铁酱油中NaFeEDTA中的铁解离出Fe3+,被盐酸羟胺还原为Fe2+并显色剂反应生成稳定的红色络合物,红色络合物在510nm波长处有最大吸收,吸光度与铁离子浓度之间成良好的线性关系,回归方程为:Y=0.387X+0.0208,相关系数R=0.9994。此方法简便、快速、准确,测定强化铁酱油中NaFeEDTA含量结果满意。
The NaFeEDTA can be totally disassembled to produce Fe^3+ under acid condition. Fe^3+ turn to Fe^2+ by hydroxylamine, Fe^2+ can react with and forms red color complex. The red color complex has most absorption peak at 510 nm and the absorption is linear with the concentration of the complex. The regress equation is Y = 0.387X + 0.0208,R = 0. 9994. The method was a simple ,quick and accurate approach for measurement of the contend of NaFeEDTA in iron fortified soy sauce.
