阐述了大豆多肽的理化性质和生理功能特性及其在运动饮料中的应用。大豆多肽是大豆蛋白的水解产物,其氨基酸组成与大豆蛋白几乎一样,且必需氨基酸平衡良好,含量丰富;同时能够提高免疫力、抗疲劳、快速恢复体力,所以在运动饮料行业有着广泛的应用前景。
The properties of soybean polypeptides and their use in sports drinks were described, including their excellent physiological functional activity and good physical-chemical properties. Soybean polypeptides are hydrolysates from soybean protein. They have almost the same amino acid composition as soybean protein and the essential amino acids in them are rich and balanced. Most of all, soybean polypeptides can help to improve human immunity, recover physical strength and have anti-fatigue effects. Therefore, they are believed to have good prospects in use in the sports drinks industry.
