摘要
以分形理论为依据,对大麦及麦芽的粗粉碎粉浆图像进行分维数计算.结果发现,麦芽与大麦粗粉碎粉浆图像分维数的差值与库尔巴哈值有一定的线性关联关系.分维数差值越大,库尔巴哈值越大.以此方法尝试用分维数来表达麦芽的溶解状况.
Fractal dimensions of images of barleys and malts pieces were calculated on the basis of the fractal theory.The dispersions of malts and barleys have the linear relationship with Kolbach index.The dispersions of malts and barleys were linearly related with the fractal dimensions.As a result,the content of soluble protein can be indicated by fractal dimension.
