摘要
以液态、浆态和固态三种不同类型的物料为对象,通过大量实验研究了真空室压力、物料含水量和尺寸对抽真空自冻结的降温速率和对冻结最终温度的影响规律。结果发现不同物料要达到抽真空自冻结的目的,首先物料自由水的含量需大于一定值,其次物料尺寸需适当,且自冻结的最终温度取决于真空室的极限压力。并对实验数据近行了回归分析,得到了实验物料抽真空自冻结的最佳工艺参数。
The influence of various factors, including lowest pressure of the vacuum chamber, water content and size of the sample in three states of solid,lidquid or syrup,on cooling rate and on final sample temperature in serf-freezing by vacuum pumping, was studied. We found that three factors,such as the water content of the sample,its geometry and the lowest pressure of the vacuum chamber, strongly affect the final temperature of self-frozen materials. Optimized self-freeze drying conditions for specific materials were calculated with computer regression.
