食品污染控制工作流程的建立与研究

摘要 目的:动态掌握本地区食品污染的程度与趋势,为政府提供控制食品污染的措施。方法:建立并细化食品污染控制工作流程。通过信息收集与本地区食品污染因素调查,初步确定实施监测的指示样品与指标,制定切实可行的计划与实施细则;对食品中生物性、化学性、物理性污染物分布情况开展全面的、连续的监测工作;建立食品污染物监测数据库并结合污染调查与本底资料,综合分析污染因素及污染水平;对食品污染控制与管理存在的问题进行探讨。结果:建立了食品污染物监测数据库;完成了食品污染的分析与评估;提出了食品污染的控制对策。结论:工作流程可行,关键环节可控,具体步骤可操作。 Objective:By understanding the level and tendency in the district dynamically to provide the control measure of food contamination for the government.Methods:The working course of food contamination control was built and refined.The workable plan and detailed rules were drafted.The monitoring samples and the index sign were defined primarily by collecting message and investigation of food contamination elements.It was kept on monitoring biological,chemical and physical food contaminants wholly and continuously.The elements and level of food contamination were analyzed by combining contamination investigation and the back material.So the food contamination database was built.The new questions of control and management on food contamination were discussed.Results:Food contamination database had been built.Analysis and evaluation had been done and countermeasures for food contamination control had been suggested.Conclusion:The working course is practicable.The key steps could be controlled.The detail steps are implemental.
