摘要
在传统水代法提取核桃油的工艺中,通过往兑浆后的料浆中加入酶,使其在温度为50℃,自然pH下酶解2.5 h,可提高出油率。通过正交试验对酶解工艺中酶用量、酶配比进行了研究。试验结果表明,酶的使用可以大幅度提高出油率。当料浆在木瓜蛋白酶为20万U/100 g油料、碱性蛋白酶为3 800 U/100 g油料、纤维素酶为100 U/100 g油料3种酶的复合下进行酶解后,经灭酶、离心,其出油效率达96%,油颜色清亮,气味、口味正常。清油分离简易,简化了提油工序。
In the traditional process of extracting walnut oil by aqueous method,the oil yield could be improved by adding enzyme into the liquid material and then hydrolyzed under the temperature 50 ℃ ,nature pH and time 2.5 h. The enzyme dosage,the enzyme proportion were researched by orthogonal experiment.The result indicated that the enzyme could significantly improve the oil yield. When the enzyme hydrolysis was performed with complex enzyme of papain 2 000 U per gram oilseed,alkaline proteinase 38 U per gram oilseed,and cellulose 1 U per gram oilseed,the oil yield efficiency was 96%,the oil was extremely fragrant,and its color was clear. Moreover,the clear oil could fall directly from the centrifuge tube,which greatly reduced the difficulty of separating oil.
