摘要
目的:评估江苏省城乡居民膳食营养状况及特点。方法:采用多阶段分层随机抽样,连续3天24小时膳食回顾和称重。结果:江苏城乡居民谷类、畜禽肉类、蛋类、鱼虾类平均每标准人日摄入量达到或接近平衡膳食宝塔推荐量;蔬菜、水果、豆类及制品、奶类及制品摄入量偏低;油脂类摄入量偏高。随着居民经济收入增加,谷类、薯类食物摄入量呈下降趋势,蔬菜、畜禽肉类、鱼虾类、蛋类及奶类呈上升趋势。结论:江苏城乡居民膳食结构不尽合理,应广泛开展营养宣教和干预工作,促进居民形成健康的食物消费行为,提高其营养与健康状况。
Objective: To assess dietary nutritional status and characteristics among rural and urban residents in Jiangsu province. Mothods: Twenty four hours dietary recalled method and weighed method for 3 consecutive days were used to collect dietary information by multi--stage random sampling method. Results : Compared to the reference intake of Chinese Balance Dietary Pagoda (CBDP) 9 the average intake (per reference man per day) of cereals, meat, eggs, fishes met the reeommenda-tion; however, intake of vegetables, fruits, legume and dairy were lower than recommendation. Intake of edible oil was higher than the reference. With the economic income increased in residents, the trends of intake of cereals and tuber decreased while intake of vegetables, meat, fishes, eggs and dairy increased. Conclusion: Nutritional education and intervention are needed to promote healthy eating behavior and to improve the nutritional status and health condition.
