摘要
以大青皮酸、大青皮甜、小青皮甜、青皮马牙甜、青皮软籽、青皮岗榴、三白、大红袍、泰山红等9个山东石榴主栽品种为试材,研究了石榴皮、隔膜、种子和汁中的鞣质含量。结果表明,鞣质平均含量顺序为皮>隔膜>种子>汁,分别为115.30 mg.g-13、8.48 mg.g-15、.63 mg.g-1、1.64 mg.g-1。石榴皮中鞣质含量最高的品种为青皮软籽、青皮岗榴,分别是172.98mg.g-1、169.53 mg.g-1;隔膜中鞣质含量最高的品种是青皮软籽和小青皮甜,含量分别为48.56 mg.g-1、46.80 mg.g-1;而种子和汁中含量最低的为青皮马牙甜、大青皮甜和大青皮酸、小青皮甜,分别为3.51 mg.g-1、3.54 mg.g-1和0.60 mg.g-1、0.65 mg.g-1。不同品种石榴果实、同一果实不同部分鞣质含量存在显著差异。
The tannin contents of pericarp, dissepiment, seed and pulp in the fruit of 9 pomegranate cultivars (Daqingpisuan, Daqingpitian, Xiaoqingpitian, Qingpimayatian, Qingpiruanzi, Qingpigangliu, Sanbai, Dahongpao and Taishanhong) in Shandong were determined. The results showed that the average tannin content in fruits of 9 cultivar was 115 30 mg ·g^-1 in pericarp, 38.48 mg ·g^-1 in dissepiment, 5.63 mg ·g^-1 in seeds, 1.64 mg ·g^-1 in pulp respectively, The tannin contens in the pericarp of Qingpiruanzi and Qingpigangliu (172, 98mg ·g^-1 , 169.53 mg ·g^-1) were the highest; The tannin contents in dissepiment were highest in Qingpiruanzi and Xiaoqingpitian (48.56 mg ·g^-1 , 46.80 mg ·g^-1 ) ; and the tannin contents in the seeds of Qingpimayatian and Daqingpitian were the lowest (3.51 mg ·g^-1 and 3.54 mg ·g^-1 ) ; The tannin contents in the pulp of Daqingpisuan and Xiaoqingpitian were the lowest (0.60 mg·g^-1, 0.65 mg·g^-1 ). The tannin contents were significant different among different cultivars and different parts of fruit.
