摘要
研究了β-环状糊精(β-CD)包合法脱除鸡蛋蛋黄中胆固醇,应用DX7Trial对试验数据进行分析并建立了数学模型,得出了胆固醇脱除的最佳工艺为:pH10.5,加热温度50.18℃,搅拌时间10.94min,n(β-CD):n (蛋黄液中胆固醇)=4.11:1,在此条件下,胆固醇脱除率为92.23%,产品中胆固醇含量为0.7536mg/g。
Cholesterol removal from egg yolk by β-cyclodextrin (β-CD) inclusion method was studied. The DXTTrial was used in data analysis and mathematic model creation,the optimized conditions were elicited : the heating temperature 50.18℃ ,the stirring time 11min, the mol radio of cholesterol in egg yolk and β-CD was 4. 11 : 1. In these conditions, the maximal cholesterol removal rate was up to 92.23% and the content of cholesterol in the product was 0. 7536 mg/g.
