摘要
微波萃取是一种具有发展潜力的新的萃取技术,是使用微波及合适的溶剂在微波反应器中从各种物质中提取各种化学成分的技术和方法,现已广泛应用于食品加工中。文中综述了微波萃取技术的原理、特点和方法,以及近年来在天然物质提取方面的应用,并展望了在食品中的发展前景。
Microwave assisted extraction (MAE) is a potential and new extraction technique, which is widely used in food industry. The fundamental and recent advances of MAE with its applications in natural materials extraction were reviewed. Its prospects in food industry were also described.
