摘要
胶原蛋白是一种功能性蛋白,广泛应用于医疗和食品工业中。对人工养殖的鲟鱼皮胶原蛋白的提取工艺进行详细的探讨如下:采用酸法提取胶原蛋白,对提取胶原蛋白过程中酸的种类、酸的浓度、用量、提取时间和提取温度对胶原蛋白提取率的影响进行详细的研究。正交实验表明,酸法提取人工养殖鲟鱼皮中胶原蛋白的最佳工艺为以1.0mol/L的乳酸作为提取剂,采用1∶5的固液比,在20℃下提取72h,其提取率最高为86.18%。同时,测定了人工养殖的鲟鱼皮胶原蛋白的最大紫外吸收波长为235nm。
Collagens is one kind of functional proteins with extensive application in medicament and food industry fields. The technology of extracted collagen from the skin of sturgeon is studied in the paper. The extraction technology including acid choice, acid concentration, immersion time and temperature. The optimal processing conditions were obtained by orthogonal experiments. The parameters are as follows: concentration of lactate is 1.0 mol/L and the solid-liquid ratio is 1:5, immersion time is 72 hours at 20℃, the recovery of the collagens was 86.18%. Collagen from the skin of farmed sturgeon absorb light with a λmax of 235 nm.
