浆果多酚的功能活性 被引量:9

摘要 浆果风味独特,大部分富含具有生物活性物质多酚类物质,包括黄酮、单宁和酚酸等。大量研究表明,浆果多酚是一种很好的抗氧化物质。此外,含单宁的浆果还表现出抑菌活性,可抑制某些致病细菌。近年来,浆果多酚的功能活性逐渐成为研究热点,针对浆果多酚功能活性的研究为食品工业提供了新的应用前景。
