摘要 [目的]探讨低温和冰温在贡柑果实成熟中的生理作用。[方法]以7年生德庆贡柑果树为试验材料,研究3种贮藏温度对贡柑采后生理和贮藏品质的影响。[结果]采后德庆贡柑在不同温度条件下果实呼吸作用呈现不同的变化方式,常温(14~24℃)条件下呼吸强度与环境温度高低有关;低温([4±1)℃]和冰温([-1±0.5)℃]条件下诱导产生呼吸高峰,且与乙烯释放量的变化有密切的关系。贡柑果实不同温度条件下贮藏25 d,可溶性固形物(TSS)含量从11%下降至近10%,处理间没有显著差异;可滴定酸含量由0.045 g/L下降至0.032~0.038 g/L间,处理间差异显著。[结论]低温条件下德庆贡柑果实品质保持较好,常温条件下果实出现异味,冰温条件下果实出现结冰沙现象。 [Objective] The purpose was to discuss the physiological effects of low and ice temperatures during the maturation of Citrus reticulata Blanco var. Gong-gan fruit. [Method] With 7-year-old fruit trees of Deqing Gong-gan as tested materials, the influences of 3 storage temperatures on the post-harvest physiology and storage quality of Gong-gan were studied. [Result] The post-harvest respiration of Deqing Gong-gan fruit under different temperatures showed different change modes. Under normal temperature (14~24℃), the respiration intension related to environmental temperature. Under low temperature [(4±1)℃] and ice temperature [(-1±0.5)℃], the respiratory peak was generated and had close relationship with the change of ethylene releasing rate. When Gong-gan fruits were stored under different temperatures for 25 d, the total soluble substance (TSS) content in fruits reduced from 11% to about 10 % and there was no significant difference among treatments, and the titratable acid content in fruits decreased from 0.045 g/L to 0.032~0.038 g/L and the difference among treatments was significant. [Conclusion] The fruit quality of Deqing Gong-gan was kept better under low temperature, the fruit appeared abnormal smell under normal temperature and freezing in sand shape under ice temperature.
