摘要
对氨基酸螯合铁的吸收机制、吸收作用的特点、化学和生物化学制备方法及其在饲料、食品中的应用现状进行了综述,提出了目前氨基酸螯合铁研究及应用中存在的主要问题和今后发展的方向.
The mechanism of absorption, absorptive action characteristic, chemical and biochemical preparative methods and utilizing status in feedstuffs and foods domain of amino acid chelated iron acting for a new type of iron fortificant were overviewed. Based on above of all, current key issue and prospective directions for investigating and utilizing of amino acid chelated iron were also proposed.
