摘要
食品中的病原微生物是影响食品安全的主要因素之一,传统检测食源性致病菌的方法繁琐复杂、周期较长,因而快速、简便、特异的检测方法成为研究的热点。介绍并分析了几种快速检测食源性致病菌的方法及其特点,就其发展和应用进行了综述。
Pathogenic microbe is one of the most primary factor which effects on food safety, traditional methods for detection of foodborne pathogens are quite complex, and cost much time. This article introduces several methods for fast de- tection of foodborne pathogens, the development of these technologies will produce the enormous impetus to the food hygiene test.
