介绍肉类定向分离与物性重组技术的概念、肉类定向分离技术、物性重组技术以及应用肉类定向分离与物性重组技术开发研究功能性肉制品。
The concept of directional separation and qualitative recombination of meat ingredients (OSQN) , technique of directional separation of meat ingredients and qualitative recombination of meat ingredients as well as development of functional meat products using OSQR technique were introduced in this paper.
