摘要
[目的]研究不同陈化条件下烤烟的绿原酸含量及褐变程度。[方法]以云烟85、K326为材料,研究不同的温度、湿度、氧气浓度对烤烟绿原酸含量及烟叶颜色值的影响。[结果]云烟85和K326的绿原酸含量随温度、湿度、氧气浓度的增加而减少,褐变程度随温度、空气湿度的增加而增加。在相同的温差下,温度越高,褐变越剧烈;空气湿度大于50%时,烟叶颜色值增加显著。在烟叶含水量相同的条件下,氧气浓度越高,褐变越强烈。[结论]烤烟的绿原酸含量与烟叶颜色值呈负相关,温度和空气湿度都可以加速绿原酸的氧化,增加烟叶的褐变程度。
[ Objective] the purpose was to study the chlorogenic acid content and browning degree of flue-cured tobacco under different aging conditions. [ Method] With Yunyan 85 and K326 as tested materials, the effects of different temperatures, humidity and oxygen concn, on the chlorogenic acid content in flue-cured tobacco and the color value of tobacco leaf were studied. [ Result ] The chlorogenic acid contents in Yunyan 85 and K326 reduced along with the increments of temperature, humidity and oxygen concn, and their browning degrees increased along with the increments of temperature and air humidity. Under the same temperature difference, the higher the temperature was, the more intensive the browning was and when the air humidity was higher than 50%, the color value of tobacco leaf increased significantly. Under the same water content in tobacco leaf, the higher the oxygen conon, was, the mere intensive the browning was. [ Conclusion] The chlorogenic acid content in flue-cured tobacco showed negative correlation with the color value of tobacco leaf. Both temperature and air humidity could accelerate the oxidation of chlorogenic acid and increase the browning degree of tobacc; leaf.
