摘要
研究了复合涂膜与低温相结合保藏鲜食糯玉米的效果。结果表明:复合涂膜与低温相结合可有效地延长鲜食糯玉米的货架期,在2℃、85%~90%相对湿度条件下,可溶性糖、水分下降缓慢,腐败指数、食味品质劣变不明显,其中植酸复合涂膜表现了更好的保鲜效果,可延长保鲜期50 d以上,具有较好的应用价值。
This text aims to study the effect of application of compound coating film in low temperature in preservation of fresh waxy, corn. The result shows that it has applied values in preserving the fresh waxy corn. It can prevent the degradation of soluble sugar and moisture content drop quickly, the corrupt index and the food taste quality changed poorly not obvious under 2 ℃, 85%-90% RH. Among the 3 films, phytic compound coating film acid exhibit a better preservation effect, which prolonged the shelf time over 50 d.
