摘要
以红曲霉为研究材料,根据Box-Benhnken的中心组合试验设计原则,对接种量、初始pH值和装液量3个因素进行实验和响应面分析,得出固定化红曲霉细胞发酵的最佳条件:接种量5.3%、初始pH值为5.9、500mL三角瓶的装液量151mL,经过96h发酵,色价可达到60U/mL左右,并且固定化红曲霉细胞发酵性能稳定。
The effects of inoculum size, original pH and flask volume on fermentation of Monascus purpureus were study by response sttrlaee methodology based on the Box-Benhnken center united experimental design principles. The optimum fermentation conditions of immobilized Monascus were as following: inoculum 5.3%; original pH 5.9; liquid capacity in 500mL triangle flask 151mL. Aider 96 hours fermentation, the color value achieved about 60U/mL and the fementation properties of immobilized Monascus was stable.
