蔗糖溶液玻璃化转变温度的试验测定 被引量:2

摘要 以蔗糖溶液为样品,摸索出了用新型的低温显微DSC系统测量溶液玻璃化转变温度T′g的方法步骤。与单一的DSC曲线法相比,这种DSC曲线与低温显微图象相结合的方法,主要具有能准确确定发生玻璃化转变点的优点。 Taking sucrose solutions as samples, the method to measure the foods glass transition temperature by cryomicroscopeDSC was found. Compared with the DSC, the method which combine the DSC curve with croymicrophotograph has the advantage of determining the glass transition point more accurately.
