摘要
以蔗糖溶液为样品,摸索出了用新型的低温显微DSC系统测量溶液玻璃化转变温度T′g的方法步骤。与单一的DSC曲线法相比,这种DSC曲线与低温显微图象相结合的方法,主要具有能准确确定发生玻璃化转变点的优点。
Taking sucrose solutions as samples, the method to measure the foods glass transition temperature by cryomicroscopeDSC was found. Compared with the DSC, the method which combine the DSC curve with croymicrophotograph has the advantage of determining the glass transition point more accurately.
