摘要
阐述了冬枣的呼吸类型、采后Vc含量及其与呼吸强度变化的关系,采后多酚氧化酶(PPO)、过氧化物酶(POD)、乙烯等生化指标的变化规律,并就冬枣的采收、分级、预处理及现代保鲜技术进行了综述。
Respiration type of winter jujube (Ziziphus jujube Mill.), postharvest Vc content and its relationship with respiratory strength change were elaborated as well as the change rules of biochemical indices (PPO, POD and ethene). The harvest, classification, pre-treatment and modern fresh-keeping technologies of winter jujube were reviewed.
