摘要
ε-聚赖氨酸具有抑菌谱广、水溶性强、安全性高等特点,在日本、韩国、美国等已经批准作为新型生物食品添加剂使用。该文综述了ε-聚赖氨酸的结构、生物学特性、抑菌机理、发酵制备方法以及应用现状等。
The ε-polylysine, which exhibits a broad antibacterial activities, good water-solubility and high safety, has been authorized to be a new food additive in Japan, South Korea, United State, etc. The structure, biological characteristics, antibacterial mechanism, fermentation production and current application of ε-polylysine were summarized in this paper.
