菊粉又名菊糖,经水解后可生成低聚果糖,菊粉和低聚果糖是一种重要的益生元(即双歧因子),本文主要论述了菊粉与低聚果糖的制取工艺、物化性质、生理功能及应用。
Inulin and oligofructose (FOS) are a kind of prebiotics. In this article the following characteristics of inulin and FOS were discussed: process, physiochemical properties, physiological functions and application in the food.
