摘要
本文研究了枸杞子色素的种类及其对pH、光照和温度的稳定性。结果表明,枸杞子含有至少三种色素,光照和高温均可显著降低吸光度,pH>1.1时色素稳定,pH≤1.1时变色。
In this paper the kinds of extracting pigment from Lycium barbarum is proposed and a preliminary study on the stability of pigment under different pH,light and temperature is presented.The results show that at least 3 kinds of pigment is contained in Lycium barbarum,high temperature and light can decompose pigment,and the pigment is stable when pH>1 1
