摘要
鸡蛋新鲜度是衡量鸡蛋品质的一个重要经济指标,也是影响鸡蛋销售的一个主要因素之一。本研究利用衡量鸡蛋新鲜度的指标气室直径、哈氏单位、蛋白高度对白来航鸡蛋进行随保存时间变化的定量研究,为制定新的鸡蛋分级标准、检测方法奠定基础。结果表明:用对数模型y=a+bln(x)可以较好地描述气室直径、哈氏单位和蛋白高度随时间变化的规律。通过这些模型能比较准确地确认鸡蛋最佳保存时间,为以后的科研、生产提供了基础性数据。通过研究,我们认为在目前的测定方法下,气室高度不是一个很好的鸡蛋新鲜度分级指标,而气室直径可以被考虑应用到鸡蛋新鲜度分级新标准的制定中。
Egg fresh index is one of the most important characteristics for measuring egg quality and is also one of the key factors for affecting marketing prices. This study measured the effects of the storage time on air diameter, Haugh unit and albumen height of the white leghorn (WL) breeds in order to provide results for developing new egg classification and measurement methods. Our results showed that logarithm model (y =a + bln(x) can accurately predict the changes of egg air diameter, Haugh unit and albumen height according to storage time changes. This study also showed that egg air height is not a good measurement for egg fresh which has been widely used in the international egg classification system, while the egg air diameter could he considered to he used on the measurement of the new egg classification standard methods.
