摘要
本文综述了环境条件对垩白、透明度、整精米率、直链淀粉含量、糊化温度、胶稠度、蛋白质含量、香味及化学成分等稻米品质性状影响,并提出了改善稻米品质的栽培措施。
This paper summarized effect of environmental conditions on rice, quality such as chalkiness, transparency, ratio of head rice, amylose content, gelatinization temperature, gel consistency, protein content, scent and chemical composition put forword the cultivation measure on improving rice quality.
