摘要
本文讨论了莜麦的营养成分和保健功能。莜麦的营养价值高,蛋白质的含量居谷类粮食之首,所含氨基酸种类全,而且比较平衡。莜麦的脂肪含量也很高,其中,亚油酸的含量占到脂肪含量的38.1%~52.0%。莜麦中的膳食纤维、Ca、P、Fe,VB2的含量也较丰富。莜麦食品具有降血脂、降血压、调节血糖、降低胆固醇、预防心血管疾病等多种保健功能。因此,国际卫生组织把它正式列为可推荐的保健食品。莜麦作为保健食品有广阔的开发利用前景。
This paper discusses the nutritional content of naked Oat and its health function.The naked oat is of high nutritional value, its protein content is the highest among all the cereals, it has a wide range of amino acids, which are also well balanced.Oat's fat content is high, in which the linoleic acid content accounted for 38.1% - 52.0%.Various effective ingredients are enriched in naked Oats, such as dietary fiber, Ca, P, Fe and VB2.Naked Oat has such pharmacological effects as curing hypolipidemic, lowering blood glucose, lowering blood pressure , lowering cholesterol, preventing cardiovascular diseases,and other health functions.Therefore, the WHO decide that it can be formally recommended as health food products.Being as a health food the naked Oat has broad prospects for development and utilization.
