燕麦蛋白源ACE抑制肽脱盐工艺研究 被引量:1

摘要 采用离子交换工艺,对强活性的燕麦蛋白ACE(Angiotensin I Converting Enzyme,血管紧张素转化酶)抑制肽进行了脱盐处理。结果表明,在10倍柱体积/h的洗脱流速和15℃的洗脱温度下,离子交换处理能脱除肽中81.8%的盐分,同时氮回收率高达89.8%,且脱盐处理对肽的ACE抑制活性影响很小。脱盐处理后的燕麦蛋白ACE抑制肽产品中的蛋白质含量为86.4%,灰分含量为2.1%。 ACE inhibitory peptides from oat protein were desalted by ion-exchange method. The results showed that 81.8% of the salts in the hydrolysate were removed, and 89.8% of nitrogen was recovered at a flow rate of 10 column volume/h and elution temperature of 15℃. Meanwhile desalinization has little effects on the ACE inhibitory activities of peptides. The treated peptides contained protein of 86.4% and ash of 2.1%.
