摘要
通过对不同地区原料加工的普洱茶中黄酮类化合物含量的分析研究结果表明:普洱茶中黄酮类化合物含量较其加工原料高;不同地区原料加工的普洱茶黄酮类化合物含量增加程度不一样,其中临沧茶增加最多,从原料到出堆一直呈增加状态,增加率达到68%。
This study analyzes the flavonoid compounds content in the processing of Yunnan Pu-erh tea,the result indicates that flavonoid compounds content in product pu-erh tea is higher than its raw materials. The content rise extent is different among different raw materials. The content rise of flavonoid compounds is highest in the materials from Lincang.From raw material to product,its flavonoid compounds content is always in rise.The rise rate is 68%.
