近红外光谱定性分析技术在食品安全中的应用研究进展 被引量:22

摘要 食品安全日益受到世界各国的广泛关注,为加强对食品安全的监督和管理,一些新的检测技术不断涌现。近红外光谱技术是近年来发展起来的一类新型的分析检测技术,可以用于鉴别食品成分掺假、食品种类、追溯不同产品来源、检测农药残留等,在食品安全领域有着广阔的应用前景。从近红外光谱定性分析原理入手,系统分析近红外光谱技术在食品安全领域的应用现状及其发展趋势,旨在为推动近红外光谱技术的发展、完善食品安全检测技术体系提供参考。 The food safety has been the focal topics of all over the world. In order to strengthen the supervision and management for the food safety, some new detection and inspection technologies were developed. As a new detection technology, the technique of Near Infrared Spectroscopy can identify the adulteration of foodstuff and the variety of food, trace the origin of the product, exam the pesticide residues and so on. It has a perspective in food safety. The paper stated the basic principle of qualitative analysis by Near Infrared Spectroscopy, analysed the application and the development of the Near Infrared Spectroscopy in the field of food safety, with the purpose of promoting the development of the technique of Near Infrared Spectroscopy and improving the system of examine technology.
