摘要
用CH2Cl2从7种芸苔属植物(花椰菜,白菜,甘蓝,芥蓝,羽衣甘蓝,大头菜,西兰花)和萝卜等种子的水解液中提取出硫代葡萄糖苷水解产物,经气相-质谱联用分析组分,分析出12种异硫氰酸盐等化合物,主要有异硫氰酸烯丙酯、异硫氰酸3-丁烯酯、异硫氰酸苯乙酯、萝卜硫素、告伊春(goitrin)、iberin、iberverin、sulforaphene等,并用气相色谱法进行了测定。其中萝卜硫素主要存在于西兰花种子中,苯乙酯存在于大头菜、花菜种子中,sulforaphene主要分布在萝卜种子中,烯丙酯和3-丁烯酯在大多数种子中都存在。
Isothiocyanates, which are rich in Cruciferae family, have shown anticarcinogenic abilities. In order to produce diet supplement that can supply beneficial isothiocyanates, the isothiocyanates pattern and content of 7 Brassica species (cauliflower, Chinese cabbage, cabbage, Chinese kale, kale, root mustard, broccoli)and radish were analyzed in this article. Glucosinolates autolysis products of seed meal were extracted by methylene chloride and then analyzed by GC-MS and GC-FID. More than 12 compounds were identified. The resuhs showed that the main compounds were allyl isothiocyanates, 3-BITC, PEITC, sulforaphane, goitrin, iberin, iberverin, sufforaphene, dehydroerucin, etc. Sulforaphane was found mainly in broccoli, PEITC was found mainly in root mustard and cauliflower, sulforaphene was found only in radish. Allyl isothiocyanate and 3-BITC were found in most species of Brassica L.
