本文介绍了淀粉酶的性质和几种常见的淀粉酶,常见的淀粉酶主要为α-淀粉酶、β-淀粉酶、葡萄糖淀粉酶及脱枝酶。
Character of amylase and several familiar amylases are reviewed in this paper. These are α-amylase, β-amylase,glucoamylase and debranching enzyme.
