摘要
综述超高压处理对淀粉结晶结构的影响,论述超高压下各种晶型淀粉结晶结构的变化,介绍常用的研究淀粉结晶结构所采用的方法,并对超高压改性淀粉的应用前景进行展望。
The effect of ultra high pressure treatment on crystal structure of starch were summarized in this paper, and the changes of crystal structure of starch under ultra high pressure were discussed, and the methods of researching crystalline structure of starch were introduced, and the prospect of high pressuretreated starch were forecasted.
