摘要
采用60Coγ射线辐照预处理晚粳稻,然后进行热风干燥。对干燥后的稻谷进行显微观察发现,随着辐照剂量的增加,稻谷胚乳里淀粉颗粒的破碎程度逐渐提高。对干燥后的稻谷干制品的品质检测发现,辐照预处理不仅没有降低明显地稻谷的加工品质,反而增加了稻谷的食用品质,且效果比干燥后再进行辐照的工艺更有效。此外,本研究应用二次正交旋转组合实验设计方法,分析了三个实验因素(辐照剂量、热风温度、初始含水率)对稻谷干品质指标(表观直链淀粉含量、胶稠度、糊化温度)的影响。结果发现,经回归得到的二次多项式方程,能有效地预测三个试验因素的改变对稻谷品质指标的影响,并得到了获得最优稻谷干品质指标的最优实验参数。另外,还对三因素中对指标影响最大的两个因素的影响进行了响应曲面分析。
A new technology of pretreating late short - grain rice by gamma - irradiation and then drying the rice with hot- air was introduced in this work, It was found by microstmcture observation that the starch granules in the irradiated rice endosperm were tore up more with increasing the irradiation dose. The milling and eating quality of the irradiated rice were studied. Results show that the irradiation pretreatment leads no decrease to rice milling quality; on the contrary, it leads the improvement of rice eating quality evidently. Further more, for the eating quality improvement, the technics of irradiation before drying is more effective than the technics of irradiation after drying. A quadratic rotation - orthogonal composite experimental design, with three variables (irradiation dose, drying temperature, and initial moisture content, at five levels) and three response functions (apparent amylose content, gel consistency, and gelatinization temperature) were employed to study the effects of the three variables on the response functions. The three response functions significantly correlate with these variables by second order polynomials consisting of linear, quadratic and interaction terms. The optimum levels of the three variables for obtaining optimum magnitude (maximum or minimum) of the three response fimctions are obtained. The response surfaces analysis, with X and Y axes representing two of the most influential variables while keeping another variable constant at their optimum point, are presented to aid in visualizing the effect of the variables.
