Soybean lecithin, with very unique function, was the byproduct of soybean oil. As a natural raw material with unique function, Soybean Lecithin had attracted great attention. The structure, physical and chemical properties of soybean lecithin, and its preparation and determination were introduced. Also, the applications of soybean lecithin in food, medicine, cosmetic was discussed.
