传统乳制品中嗜酸乳杆菌的生理特性研究 被引量:2

摘要 文章以实验室保藏的从内蒙古地区采集传统发酵乳制品中分离出的8株嗜酸乳杆菌为研究对象,研究了它们的生理特性,包括生长曲线的测定,渗透压对菌体生长的影响,耐胆盐性及抑菌能力。结果表明,该8株菌耐盐和耐胆酸盐能力分别达到6.0%和1.0%,经过多次筛选后,获得了两株细菌素产生菌株KLDS1.0365和KLDS1.0384。 In this study, the biological characteristics of 8 strains of Lactobacillus aciclophilus isolated from traditional indigenous dairy products were studied. Their growth curve, osmotic pressure tolerance, bile salts tolerance and antimicrobial activity were analyzed. The results indicated that all the strains could bear 6.0% salt and 1.0% bile salts. The bacteriocins were produced by KLDS1.0365 and KLDS1.0384.
