摘要
饭店人才短缺问题尽管已经不是一个新鲜的话题,但却是饭店行业目前乃至今后很长一段时间内业界关注的焦点,本研究的意义在于呼吁国内旅游院校改善和创新饭店管理专业教育,培养出适应饭店业需求的合格人才。通过一定的数据资料收集,采用定量分析方法,对比了饭店业人才需求与旅游院校人才供给两者的不平衡状况,特别提供了饭店业不同层次从业人员(中高层管理人员与普通从业人员)的需求与不同水平的旅游院校毕业生(高等旅游院校与中等旅游院校)的输出之间的对比,以期帮助旅游院校较直观地考虑人才培养的问题。最后,给出了若干提高旅游院校教育水平和人才培养的建议。饭店业人才匮乏问题非常严重,旅游院校教育改革和完善迫在眉睫。
China's hospitality industry has been growing rapidly over the last decade with the steady development of the national economy and the tourism industry. With the continuous growth of the hospitality industry, the problem of lacking qualified personnel seems to become increasingly serious. Meanwhile, many university tourism programs have been declining during the same period, as a large proportion of the tourism graduates do not want to work in the tourism and hotel sector. Why is this happening at the time when the hotel and tourism industry is expanding in such a fast speed? The reasons could be due to the fact that the tourism program curriculum designs cannot meet the industry requirements, and to the mismatch of the competencies of the graduates and the skills that are required by the industry. This article shows, with the aid of statistics, that the gap between the demand for and the supply of qualified graduates has been widening with a view to helping the universities/colleges to think about how to best design the tourism programs at both the degree and diploma levels. The study also provides some suggestions for improving the tourism education in China from the following four aspects: curriculum design, qualification of teaching staff, student placement and internationalization of tourism programs. Given the fact that the shortage of qualified human capital in the tourism and hotel sector has become so severe, it is pressing to reform and improve the tourism and hospitality education in China.
