介绍了耐高温酵母的分离选育以及耐高温酵母的耐热机制。主要包括海藻糖、热休克蛋白、超氧化物歧化酶(SOD)、应激糖蛋白以及细胞成分组成对酵母细胞耐热的影响。
The separation & breeding of thermo-resistant yeast and its thermo-resistant mechanism were introduced in this paper. Besides, the ef- fects oftrehalose, heat-shock protein, heat-shock protein, superoxide dismutase (SOD), stress glycoprotein and cell compositions on thermo-resistant properties of yeast were also illustrated.
