摘要
以无花果为主要原料,对用其制作保健果汁饮料的工艺要点进行了研究,研制出具有无花果特有风味的保健饮料。产品配方为:无花果汁25%+蜂蜜2%+柠檬酸0.1%+蔗糖8%+海藻酸钠0.05%+果胶0.05%+CMC-Na0.1%。
With fig as the main raw material, a study was carried out on the technological essentiais for a health drink with the unique flavour of fig. Its formula was as follows: 25% fig juice, 2% honey, 0.1% citric acid, 8% sugar, 0.05% sodium alginate, 0.05% pectin and 0.1% CMC-Na.
