摘要
由于传统乳制品安全控制体系不够完备,存在着盲区和漏洞,乳制品的安全与卫生已成为当今社会关注的重要问题。基于HACCP系统的乳制品安全控制体系采取全过程控制和三种控制方法相结合的原则,坚持源头控制,从原料抓起,以结果控制、反馈控制、前馈控制三套控制子系统结合使用,填补控制漏洞,确保了乳制品质量控制的可靠性。
It is important for society to observe the issue of dairy products security, because traditional security controlling system has some safety defect. This article emphasizes it is important to design HACCP system, enterprises dairy products safety quality defect can be remedied. It is important for enterprises to set up HACCP control system in order to ensure dairy products security.
