摘要
以酿酒剩余皮渣为原料,采用水浸提-大孔吸附树脂分离纯化甜樱桃红色素,并研究了甜樱桃红色素对自由基和亚硝基的清除能力。结果表明,甜樱桃红色素对光照核黄素体系产生的O2-·、Fenton反应产生的·OH和DPPH·自由基及NO2-均具有很强的清除作用,且在一定浓度范围内随浓度的增大而增强。在实验浓度范围(0.01~5mg/mL)内,甜樱桃红色素对O2-·、·OH、DPPH·自由基及NO2-的最大清除率分别可达到99.83%、69.26%、95.88%、96.45%。因此,甜樱桃红色素还是一种优良的天然自由基清除剂和NO-清除剂。
A pigment extract rich in anthocyanins and phenolics was obtained from sweet cherry pomace and its scavenging capacities towards superoxide anion radicals, hydroxyl radicals, DPPH· radicals, and nitroso in various in vitro system,were investigated. The sweet cherry pemace extract (SCPE) was demonstrated to exhibit strong scavenging capacities towards superoxide anion radicals generated by photoreduction of riboflavin, hydroxyl radicals generated by Fenton reaction,DPPH· radicals,and nitroso. Furthermore,the antioxidant activity was correlated with the concentration of the SCPE, showing a strong dose-dependent pattern. In the test concentration range from 0.01-5.0mg/mL,the maximum scavenging percentages to the free radicals and nitrite in above reactive systems reached to 99.83% ,69.26% ,95.88% ,96.45% respectively. The results suggested that SCPE may be also a good natural scavenger to free radicals and nitroso.
