摘要 菜籽肽具有独特的加工特性和生物活性。综述了菜籽肽的制备方法、分离技术、化学修饰和菜籽蛋白水解液中小肽氨基酸组成测定方法的研究进展,指出了菜籽肽生产工艺中存在的问题,提出了发酵法生产菜籽肽的新思路,对菜籽肽的应用前景进行了展望。 Rapeseed peptide possesses some unique processing characteristics and biological activities. The research progress on preparation methods, separation techniques, chemical modification of the rapeseed peptide and the measurement method of the amino acid composition of small peptides contained in rapeseed protein hydrolysates were reviewed. The problems existed in the production process of rapeseed peptide were pointed out;the way for producing rapeseed peptide by fermentation was proposed, and the application foreground of rapeseed peptide was forecasted.
