摘要
变温压差膨化干燥是一种新型的果蔬干燥技术,在胡萝卜加工中的应用还处于起步阶段。本文阐述了胡萝卜产业加工现状以及变温压差膨化干燥技术的国内外研究进展,并展望了变温压差膨化干燥技术在胡萝卜加工中的应用前景。
As a method of drying, the explosion puffing drying at variable temperature and pressure difference is a new technology. The application of explosion puffing drying in carrot processing is still at starting stage. The research status on carrot processing was summarized, involving explosion puffing drying. And the prospects of its application in carrot processing were discussed in this paper.
